My new found love of brussel sprouts...

Oven Roasted Brussel Sprouts

How weird is it that something you thought you have hated for your whole life is becomming one of you favorite things ever. I'm talking about brussel sprouts. Now maybe I have never had fresh ones before or maybe they were just over cooked or under seasoned? Well whatever the reason it's not how it is now. I mean, I LOVE these things!

Balsamic Roasted Brussel Sprouts (adapted from Kalyn's Kitchen)


Preheat oven to 450 degrees

Ingredients:

1 pound fresh brussel sprouts, quartered and trimmed
1/2 onion, chopped
1 Tbsp balsamic vinegar
2 Tbsp extra virgin Olive Oil
Fresh grated Parmesan cheese
about a handful of pine nuts (lightly toasted in a hot skillet)

Directions:
  • Toss the brussel sprouts and onion with the olive oil and the balsamic.
  • Place on a lightly oiled baking sheet. Cook for about 20 minutes, tossing midway through, or until they are cooked through and starting to turn a nice golden brown.
  • Remove from oven and place in a bowl. Top with pine nuts and Parmesan cheese and serve immediately.
Everyone liked these. My oldest one even asked for seconds. You can't beat that!!!

I have always felt the same way about mushrooms. I have learned to love them as well as brussels if cooked with bacon and chopped up...isn't it funny how are tastes change:D

Wow that looks fantastic. I love brussel sprouts and only ever eat them steamed with nothing on them. I will definitely have them on my next shopping list.

Those look fabulous! I have always loved brussel sprouts so this is a no brainer for me! I love adding a bit of bacon, red onions, and a tad of apple juice to deglaze, then top with a bit of Romano. Now I should try Roasted Pine Nuts as well! YUMMY!

Ok, seriously...I have always HATED brussel sprouts...blech, ugh, yuck! But this recipe intriques me...there are very few things that can't be made yummy with parmesan, pine nuts, and olive oil!

Tell me, when you post these recipes, is there a standard # of servings that I can assume? Are you generally cooking 4 portions?

Exactly. I managed to feel the same way about lima beans when my wife told me that they were butter beans. They are one and the same! She still doesn't believe it.

Now she hates brussel sprouts, but I found a way to make them good. Just goes to show...

On to the beets!

Hey Danni-I'm with you as the hater kind but these are really good. I usually do about a pound of things and that usually feeds 2 little ones and us with some left over so I think it would be safe to say for 4.

Judy, I love brussel sprouts and usually just roast them with olive oil. I can't wait to try them this way! Yum! My 3 y.o. always gets very excited when I make them! He calls them candy! The others here, not so much! But he and I just say 'more candy for us!'

When you grew up with frozen vegetables, you would hate any green veg.........

Yay! I love brussel sprouts. And, I've become addicted to adding toasted pine nuts to all of my vegetable dishes. I had to exhibit extreme self-control to keep myself from adding them to my most recent creation - sweet/sour apple cabbage rolls http://daringtothrive.blogspot.com/2008/10/gluten-free-vegetarian-cabbage-rolls.html
Don't they just add a great unique flavor to everything?

Saw you on Foodbuzz...I always loved Brussels sprout they have that zinggy bitterness to them...But if you don't like you can always do the same recipe replacing Brussels sprouts with curly cabbage.
