A Caprese Sandwich?Two nice fat slices of dead ripe tomato, a couple of leaves of basil, some fresh mozzarella, some salt and pepper and a few drizzles of good balsamic vinegar, all squished between 2 slices of good bread or in this case a bagel (the bread was baking).
Yummmm and pure summer!

Your sandwich looks so yummy and so quick to prepare :D. Since I'm not a cheese fan maybe I'd have it with some smoked salmon instead, do you think it could fit?

Very similar to my all time fav for summer - simply thick slices of tomato on soft white crusty bread. Add a drizzle of EVOO, salt and pepper and I'm in heaven!
Oh Nuria you are right on top of things today!!! Definitely smoked salmon would be wonderful with this. Add cream cheese and I would be in heaven!
