Haystacks in honor of National White Chocolate Day…

This is not a sponsored post, just something I tried and really, really liked. 

Also with it being National White Chocolate Day how could I not?

Now I know these don’t look like much (white cookies on white plate…Doh!) and I am almost embarrassed to post a “recipe” for them but these are really, really good and something we all loved even though none of us really, really love white chocolate!

Fiber One Haystacks

Ingredients:

1 sleeve of Fiber One Cereal (it comes two sleeves to a box)
1-11 oz bag of Nestle white chocolate chips

Directions:

Melt morsels in the microwave until melted and smooth
Stir in one sleeve fiber one until well coated.
Working quickly, using a teaspoon, spoon  out onto a waxed paper-lined cookie sheet into 48 small mounds.
Refrigerate until set. Store in an airtight container in refrigerator or freezer (I use a zip-loc bag).

Number of Servings: 48  WW Points 1 per serving!!!

***You can use any type of chip that you like for this, chocolate chip, butterscotch chips etc. but we have found that the best are the white chocolate!!!

Banana-Chocolate Chip Muffins

So it’s been a while.  I can give you a million reasons why I haven’t posted since last month but I won’t.  Hopefully this is the end of the dry spell.

I had 4 small bananas that were past the eating date according to everyone in my family.  I knew I needed to make something with them but couldn’t decide on anything.  I was going to make a banana cake with cream cheese frosting but getting out the mixer seemed like a lot of work while I was trying to do laundry and clean.  Banana bread rarely gets finished here for some reason.  Everyone starts gung ho on it and then I end up throwing out the last 3 slices.  I was going to make banana snicker doodles but once again sounded like too much work.

Finally I came across a recipe for banana chocolate chip muffins from the Epicurious  website.  I love this site because of the honest reviews that people leave on the recipes.  How can you go wrong when 275 people have left comments for you!!!

These muffins were delicious.  Light and fluffy, full of bananas and chocolate chips.  Definitely yummy my taste testers just confirmed! 

Banana-Chocolate Chip Muffins (Epicurious.com)

Ingredients:

  • 1 1/2 cups all purpose flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas (about 2 large)
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1/4 cup milk
  • 3/4 cup semisweet chocolate chips

Directions:

  • Preheat oven to 350°F.
  • Line twelve 1/3-cup muffin cups with foil muffin liners.
  • Mix flour, sugar, baking powder and salt in large bowl.
  • Mix mashed bananas, egg, melted butter and milk in medium bowl.
  • Stir banana mixture into dry ingredients just until blended (do not overmix).
  • Stir in chocolate chips.
  • Divide batter among prepared muffin cups, filling each about 3/4 full.
  • Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes.
  • Transfer muffins to rack; cool.

Oatmeal Cookies with Browned Butter Icing

Finally you say…so after teasing you and badgering you with pictures and descriptions on both Facebook and Twitter, promising to post it for you over the weekend, here it is. This was a wonderful, wonderful way to eat some healthy for you as in oatmeal cookies and junk them right up but in a very, very good way!

Now, there are several steps to making this and they look complicated but they really aren’t. I would think that if you really wanted to you could use the ice cream caramel syrup that they sell in the grocery store but if you make this caramel syrup you will be able to make caramels with the leftovers! I actually had the leftover caramel syrup and the frosting from the Caramel Cake that I made for one of my gf, Kathy, last week!

CARAMEL SYRUP (Shuna Fish Lydon of Eggbeater)

2 cups sugar
1/2 cup water
1 cup water (for "stopping" the caramelization process)
In a small stainless steel saucepan, with tall sides, mix water and sugar until mixture feels like wet sand. Brush down any stray sugar crystals with wet pastry brush. Turn on heat to highest flame. Cook until smoking slightly: dark amber.
When color is achieved, very carefully pour in one cup of water. Caramel will jump and sputter about! It is very dangerous, so have long sleeves on and be prepared to step back.
Whisk over medium heat until it has reduced slightly and feels sticky between two fingers. {Obviously wait for it to cool on a spoon before touching it.}
Note: For safety reasons, have ready a bowl of ice water to plunge your hands into if any caramel should land on your skin.

Once you have the caramel cooked you can go ahead with the frosting once it has cooled.

CARAMELIZED BUTTER FROSTING (Shuna Fish Lydon of Eggbeater)

  • 12 tablespoons unsalted butter
  • 1 pound confectioner’s sugar, sifted
  • 4-6 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • 2-4 tablespoons caramel syrup
  • Kosher or sea salt to taste


Cook butter until brown. Pour through a fine meshed sieve into a heatproof bowl, set aside to cool.
Pour cooled brown butter into mixer bowl.
In a stand mixer fitted with a paddle or whisk attachment, add confectioner's sugar a little at a time. When mixture looks too chunky to take any more, add a bit of cream and or caramel syrup. Repeat until mixture looks smooth and all confectioner's sugar has been incorporated. Add salt to taste.

Note: Caramelized butter frosting will keep in fridge for up to a month.
To smooth out from cold, microwave a bit, then mix with paddle attachment until smooth and light

The cookies I made to go with this are the really simple and straight forward. I took the one from the top of the Quaker Oats can and just omitted the raisins. I wanted to other flavors messing with the frosting!

Oatmeal Cookies (adapted from the lid to the Quaker Oats canister)

  • 1/2 pound (2 sticks) margarine or butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt (optional)
  • 3 cups Quaker Oats (quick or old fashioned, uncooked)

Heat oven to 350°F.

In large bowl, beat together margarine and sugars with electric mixer until creamy. Add eggs and vanilla; beat well. In medium bowl, combine flour, baking soda, cinnamon and salt; mix well. Add to margarine mixture; mix well. Stir in oats and raisins; mix well.

Drop by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

I really can’t say enough about these cookies. They should sell these everywhere…hey I should sell these everywhere!!! Incredible flavor combination that should be repeated and repeated!

Customized Trail Mix

See all that healthy goodness. Good thing the kids don't realize it's good for them!

I was just hanging out reading some of my favorite blogs the other day when I came across Jo's blog The Adventure's of Kitchen Girl. First off I saw her really cute kids but then I saw what the post was about and immediately called my girls over. They loved this idea!!!

Customized Trail Mix (see Jo's version here )

combinations of ingredients:

pretzels (goldfish, sticks or twists)
Trail Mix (unsalted all cashews, peanuts, pistachios, sunflower kernels, raisins and dried mango)
peanut butter chips
chocolate chips

Today I bought:

Dried apricots (will cut them up)
banana chips
Craisins
dried cherries
salted cashews
grated coconut (unsweetened)

I mixed this up in 2 zip top bags for the girls. That way they could each make there own. They packed a smaller bag up to take to school. I think they really loved that they could make it whatever they wanted it to be and I like it because despite the chocolate and peanut butter chips it is still healthy and makes for a nice high energy snack!

I will be making this over and over again! Thanks Jo for a great idea!

My Dirty Little Secret!


We all have them. You know that dish that you whip together really fast using every single shortcut you can think of...well I did it the other day and EVERYONE LOVED IT!!!!

Believe it or not last week I had 2 funerals to attend. The first one was for my neighbor so I went to the viewing and showed my support but the other one was one of my very close friends husband. Neither of these were unexpected and they had both been in Hospice Care but it doesn't make their passing any easier.

Anyway on with my story...my friend was having an open house after the service and I told her I would bring a dish so that she had one less thing to worry about.

I stood and stared at my pantry for some inspiration. I stood there for a long, long time. I went to the fridge. Same thing. I couldn't even decide if I should do a sweet or a savory dish. I finally went through an old box I had of baking things and that's when it came to me. Fruit pizza!

Years ago at a school auction I had one a basket with a baking theme. You know the baskets that are chock full of everything you need to "bake". Cookie mixes, cake mixes, frosting, pancake mixes etc. Well I've used some of the stuff but lucky for me I had never had the need to use a bag of sugar cookie mix that was in there. I also had a very old tub of cream cheese frosting. I was so lazy on this I didn't even mix the frosting with whipped cream I just spread it on like it was from the tub and topped that bad boy with kiwi, strawberries and blueberries!

Normally I wouldn't even post something like this but it was such a hit. I had all sorts of people wanting to know how to make it, what was in it. Did I lie and tell them it was all from scratch or did I fess up? I'll never tell but this was that one dish at a pot luck that everyone raves over. This was it!!!


Fruit Pizza-Betty Crocker

1pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2cup butter or margarine, melted
1egg
1cup whipping cream
1/2cup Betty Crocker® Rich & Creamy cream cheese frosting (from 1-lb container)
3 1/2cups assorted fresh fruit
1.
Heat oven to 375°F. Lightly spray 14-inch pizza pan or 15x10-inch baking pan with cooking spray.
2.In medium bowl, stir cookie mix, melted butter and egg until soft dough forms. Press dough in bottom of pan. Bake 10 to 15 minutes or until light golden brown. Cool completely, about 45 minutes.
3.In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Gently stir frosting into whipped cream. Spread over cookie pizza. Arrange fruit on top.

Very, Very, Yummy Peanut Butter Bars!


I was going to wait until later tonight to do a post about the amazing shrimp I got today from my Shrimp Guys but I changed my mind and am going to sit on my butt with my feet up for the night so that post will have to wait until tomorrow.

Anyway, I had about 40 minutes before it was time for me to go and get the girls this afternoon and I realized that they really had nothing for a snack and I had seen a recipe for Peanut Butter Bars earlier this week on A Southern Grace and thought I could make these before I got the girls. Grace's are much cuter and she cut them into little, cute hearts...yep I had about 30 minutes at this point, remember. We had ran out of our regular organic, all natural PB mid week and we have been feeding the girl's some Skippy (egad it has sugar in it????) that I had left over from Christmas baking until I got some on Saturday. So I really wanted to get this used up and out of the house and this was a great way to do it. This whole recipe probably took me about 10 minutes to make and are they ever good but don't take my word for it. Pull out the peanut butter the next time you have 10 minutes that you don't know what to do with!

Very, Very Yummy Peanut Butter Bars (from Recipezaar)

3/4 C graham cracker crumbs
1 1/2 - 2 C powdered sugar
3/4 C peanut butter
1/2 C butter, melted
1 (12 oz) bag semi sweet chocolate chips (I used Ghirardelli's semi-sweet and bittersweet chips mixed)

Combine the crumbs, sugar, and peanut butter and mix well. Blend in the melted butter until well combined. Press mixture evenly into a greased or wax paper lined 8X8 pan. Melt chocolate chips and spread over the peanut butter mixture. Chill until just set and cut into bars. Allow to cool the rest of the way before serving.
