Pumpkin Spice Granola Bars

So I have been kinda MIA for the month right?  Not going to bore you with the details but I have been busy.  Really, really busy.  But now my Mom is here.  For the winter.  And I can finally breathe a sigh of relief.  You know how we all wish for an extra set of hands to help out?  I finally have them!
Anyway, I have fallen in love with these granola bars and really needed to take a second to post them. 
My friend Maria of Two Peas and Their Pod posted these one morning a while back and I made them that same day…for the first time.  I have made them so often since then that I no longer need a recipe.  They are a hit and my kids love them!

Pumpkin Spice Granola Bars (Two Peas and Their Pod)
Ingredients:
3 1/4 cups old fashioned oats
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
¾ cup brown sugar
½ cup pumpkin puree
¼ cup applesauce
¼ cup honey
1 teaspoon vanilla extract
1 cup chocolate chips
Directions:
1. Preheat oven to 350 degrees F. Spray an 8 by 8 baking pan with cooking spray and set aside.
2. In a large bowl, whisk oats, spices, and salt together. Set aside.
3. In a medium bowl, whisk brown sugar, pumpkin, applesauce, honey, and vanilla extract until smooth. Pour over oats and stir well, until all of the oats are moist. Stir in chocolate chips.
4. Evenly press oat mixture into prepared pan. Bake for 30-35 minutes or until golden brown. The pumpkin keeps the bars moist, so make sure they are golden and set-you don’t want them to be under baked. Remove from oven and let cool on a wire rack for 5 minutes.
5. Using a sharp knife, cut into bars. Remove from pan and let cool completely.
***I have changed nothing with this recipe except to add mini chocolate chips sometimes and to bake them a bit longer.  Maria has a new oven and I think it may work a bit better than mine…

Best-Ever Apple Cake

I love fall and all of the wonderful flavors and smells that go with the foods associated with it.  Hard to believe then that I spend my life living in SWFL right?  We do have fall here but it is very subtle.  Not the glaring colors of leaves changing, more like our grass just going brown…but fall is fall and changing temperatures, shorter days and lower humidity are all good things in my book!
When I got this months Southern Living magazine on of the first things that caught my eye as I quickly scanned through was “Our Best-Ever Apple Cake”  and I knew as soon as I saw the recipe for Browned Butter Frosting that I was going to have to make it my own…

Our Best-Ever Apple Cake (Southern Living October 2010)

Ingredients:

  • 1 1/2  cups  chopped pecans
  • 1/2  cup  butter, melted
  • 2  cups  sugar
  • 2  large eggs
  • 1  teaspoon  vanilla extract
  • 2  cups  all-purpose flour
  • 2  teaspoons  ground cinnamon
  • 1  teaspoon  baking soda
  • 1  teaspoon  salt
  • 2 1/2  pounds  Granny Smith apples (about 4 large), peeled and cut into 1/4-inch-thick wedges

Directions:

1. Preheat oven to 350°. Bake pecans in a single layer in a shallow pan 5 to 7 minutes or until lightly toasted and fragrant, stirring halfway through.
2. Stir together butter and next 3 ingredients in a large bowl until blended.
3. Combine flour and next 3 ingredients; add to butter mixture, stirring until blended. Stir in apples and 1 cup pecans. (Batter will be very thick, similar to a cookie dough.) Spread batter into a lightly greased 13- x 9-inch pan.
4. Bake at 350° for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack (about 45 minutes). Spread your choice of frosting over top of cake; sprinkle with remaining 1/2 cup pecans.
Browned-Butter Frosting

Ingredients:

  • 1  cup  butter
  • 1  (16-oz.) package powdered sugar
  • 1/4  cup  milk
  • 1  teaspoon  vanilla extract

Directions:

1. Cook butter in a small heavy saucepan over medium heat, stirring constantly, 6 to 8 minutes or until butter begins to turn golden brown. Remove pan from heat immediately, and pour butter into a small bowl. Cover and chill 1 hour or until butter is cool and begins to solidify.
2. Beat butter at medium speed with an electric mixer until fluffy; gradually add powdered sugar alternately with milk, beginning and ending with powdered sugar. Beat mixture at low speed until well blended after each addition. Stir in vanilla.
***This cake is delicious.  Tony said it was one of the best.  I think he just loved the frosting and I could have put it on anything and he would have been in love.  The one thing about this cake is that they recommend 2 other frostings to go with it.  You can take you pick but I highly recommend the Browned-Butter Frosting…

    Finally my computer is back to normal and “healthy” banana bread!

    I have had some major issues going on with my computer and the bank for the past week.  My computer was attacked by a virus and then my bank account was compromised so they cancelled my access…been a fun week trying to get everything back to normal but at least my computer is up and working!!! 

    Most of you know that I have been trying to eat healthier and lose some pounds that have been steadily creeping up. Well, I am proud to say that I am now down almost 20 lbs from what I was at the beginning of the year!!!  Feeling much better and liking the way that my body feels and looks!  One of the things I have been doing is not baking so much but when I do to substitute some of the fat for apple sauce, bananas or pumpkin puree.  So the other day when I had some oldish bananas I set to work…

    Banana, Strawberry and Chocolate Chip Quick Bread

    Ingredients:

    1/2 cup unsweetened apple sauce
    1/2 cup turbinado sugar
    1/2 cup sugar
    2 eggs
    1 cup banana, mashed (about 2 medium sized bananas)
    1/4 cup milk
    2 cups all purpose flour (next time I will try 1/2 of it whole wheat flour)
    1 tsp baking soda
    1/2 tsp salt
    1 cup strawberries, hulled and diced
    1/2 cup chocolate chips or chunks (I used semi-sweet but you can use what you like)

    Directions: Preheat oven to 350F

    • In a mixing bowl mix the apple sauce and sugar.
    • Add the eggs one at a time and beat well after each one.
    • Add the banana and the milk.
    • In a separate bowl mix together the flour, baking soda and salt and add to the wet mixture until just blended.
    • Using a spoon mix in the strawberries and chocolate chips
    • Pour into a greased 9X5X3 inch loaf pan and bake in your preheated 350 degree over for about 1 hr and 10 minutes or until tester comes out clean.
    • cool for 10 minutes in pan then remove to cool completely on a wire rack.

    ***Based on 16 slices from the loaf of quick bread this is 3 WW Points

    Apple Pancakes for dinner…

    We are still in our crazy, running all the time, trying to find some sense of balance in our lives mode.  So I am making dinners in the crockpot or else finding things that I can make ahead of time and just reheat for a quick meal between activities (BMX racing, ice skating, and karate).  I made a really good white chicken chili but ate it all without a single photo.  So will post when I make it again and you can bet I will be making it again, it was just that good.

    Anyway, these pancakes came about because I had some fruit that badly needed to be used up or tossed out tomorrow.  There were 6 apples, 4 bananas and 2 pears.  3 of the bananas went into banana chocolate chip muffins (1 had to be tossed), and 3 apples went into the pancakes.  I am going to make apple/pear sauce with the remaining fruit to use as topping for the pancakes!  These pancakes are delicious and a perfect way to use up some of that fruit.  They can be made ahead and just warmed up (for dinner) but of course they are way better hot off the griddle!

    Apple Pancakes (adapted from Smitten Kitchen)

    Ingredients:

    2 eggs, well beaten
    1 1/2 cups of milk
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/2 cup sugar
    1 tsp vanilla extract
    1 tsp cinnamon
    14 tsp nutmeg
    3 medium apples, peeled and coarsely grated (I used macintosh and a honey crisp apple.  You could use any)

    Directions:

    1. Mix the eggs with the milk and vanilla extract in a large bowl.
    2. In a smaller bowl, whisk the flour, baking powder, salt and sugar, cinnamon and nutmeg together.
    3. Combine the wet and the dry ingredients and stir in the apples.
    4. Heat a thin layer of oil in an electric skillet on medium heat. Drop large spoonful of batter into the pan and flatten it out a little (otherwise, you might have trouble getting them to cook in the center) and cook until golden brown underneath. Flip the pancakes and cook them for an additional two or three minutes.

    I sprinkled these with cinnamon sugar and topped them with maple syrup but apple sauce will be great on them too!

    Apples in Puff Pastry

    This was a nice size to 1/4 and serve a piece for each of us!

    No I didn't make my own puff pastry. Did that once and didn't really turn out so good for me. This time I was in a hurry anyway and just wanted to use up some aging apples that I had been looking at for a while. I had one leftover sheet of puff pastry in the freezer so I thawed that out and took my apples and just plopped them in and pulled up all the edges almost like an apple galette but with puff pastry. I used an egg wash on the pastry and placed it in the oven at 350 for about 30 minutes. Checking often to see about the coloring of it. It should b a nice golden brown.

    For the apples all I did was chop up a couple of apples and to taste I added cardamom, cinnamon, ginger, cloves, some sugar and a touch of water. These apples were a little dried out so I added an over ripe pear to the mix as well. I let this cook until the apples were soft. I let this cool over night but I think room temp would be okay.

    This was a super easy dessert and the whole family thought I put a lot of work into it. The presentation is wonderful!

    Tonight we are trying something new here. I am hosting our first monthly Dinner with Our Friends. We always used to have parties regularly but believe me when you have a huge group of friends this can get very costly. My friend Jenn and I were talking and she was telling me about some of their friends that host a Community Dinner every Tuesday night. They pick a theme for the night and then just give their friends an open invitation. I loved this idea but there is nooooo way in this world that I could ever do a weekly thing so I decided on the first Friday of every month. I said that I would host the first few and that anyone who wanted could take it over after this. We also decided on one list of friends (about 40 people with about 1/3 of that children) that are invited every month. Whoever is hosting can add to that list but not remove. Everyone is pretty excited about this and so are we. I only had to make lasagna and tidy up my house!!! Love this and can't wait to see everyone!!! I'll fill you in more on Monday after our first one but this is a low impact way to keep up with everyone throughout our very busy lives!!!
